Any raw ideas for piles of zuchinni? Maybe a future blog post?
So I told her I’d put a post together with a list of great raw things you can do with fresh zucchini.
Here we go: 10 Tasty Ways To Enjoy Raw Zucchini
- Slice them and put them in a dehydrator to dry them out and make Zuke Chips
- Slice them kinda thick and put a dollop of guacamole on top for appetizers. (AKA Treat them like crackers!)
- Use a shredder and put the zucchini flurries onto your salad. (One of my favorites.)
- Slice them long ways and turn them into Zucchini Fries for dipping into amazing sauces or raw hummus.
- Turn the zucchini into a raw hummus using a food processor or high powered blender.
- Use a peeler and make flat zucchini noodles. Cover them in a raw marinara sauce like spaghetti.
- Use a spiralizer and turn the zucchini into curly noodles. Cover them in a delicious raw Thai sauce.
- Chop it into Trivial Pursuit pie-piece shapes (by quartering the zucchini). Toss those onto your favorite salad.
- Slice the zucchini very thin (length-wise) on a mandolin and use it as you would a nori wrap to make little raw sushi bites.
- Make this spicy Chopped Zucchini Mexicano and serve it stuffed in a red bell pepper.
(Yum! I totally started wanting some zucchini after making this list)
Some Like It Raw HINT!
If you’re not used to eating zucchini raw, start by eating it in tiny pieces.
Grate it. Shred it. Blend it. Dice it.
The more unfamiliar a raw veggie is to you, the smaller it should be when you first start eating it.
It gives you a nice gradual introduction to it.
Later you can enjoy the chunkier versions of the veggie.
This is especially true with squashes, broccoli and cauliflower.
Think tiny in the beginning. Tinier bits allow you to enjoy larger amounts of the veggies.

Cooked zucchini is totally different – you’re right. It gets slimy and super mushy. I used to like it, but I totally understand why some people don’t.
Fresh raw zucchini is super versatile. I hope you found some great ideas.

I don’t (yet!) grow my own zukkies either. I love getting them from my farmer’s market. So grateful there are certified organic farms near me. I love supporting them.
Hi Mona , I often finally grate it with carrot and any other raw veggies and put it in lettuce leaves and roll up.you can make a dip for this and it’s yummy.)
